# How to Make It:

01 - Combine diced chicken breast with olive oil, paprika, garlic powder, salt, and black pepper in a mixing bowl. Toss until evenly coated.
02 - Heat a skillet over medium-high heat. Add seasoned chicken and cook for 7-8 minutes, stirring occasionally, until golden brown and cooked through. Remove from heat and set aside.
03 - Wash and chop romaine lettuce. Dice cucumber, slice red bell pepper, halve cherry tomatoes, shred red cabbage, and slice avocado. Keep vegetables refrigerated until assembly.
04 - Place avocado, Greek yogurt, olive oil, lime juice, minced garlic, salt, and pepper in a blender. Process until smooth and creamy. Add water 1 tablespoon at a time until desired pourable consistency is reached.
05 - Divide romaine lettuce evenly among 4 serving bowls. Arrange cucumber, bell pepper, cherry tomatoes, red cabbage, avocado slices, and cooked chicken on top of the lettuce in sections.
06 - Drizzle avocado dressing generously over each bowl. Sprinkle with shredded cheese, pumpkin seeds, and fresh cilantro. Serve immediately with lime wedges on the side.

# Expert Advice:

01 -
  • You can prep everything in advance and assemble in under five minutes on busy weeknights
  • The avocado dressing is so rich and creamy you wont believe its keto-friendly
  • Every bite delivers crunch, creaminess, and bright flavors without the carb crash
02 -
  • The chicken continues cooking slightly after you remove it from the pan, so take it off when its just barely done to prevent drying out
  • Blend the dressing immediately before serving because avocado oxidizes and turns brownish even in the refrigerator
  • Keep the components separate for meal prep and assemble just before eating to maintain texture and freshness
03 -
  • Pat your chicken completely dry before seasoning, otherwise the spices slide right off in the pan
  • Invest in an avocado saver tool to keep unused avocado fresh for days without browning
