01 - Dissolve strawberry gelatin in 1 cup boiling water. Stir in 1 cup cold water. Pour into a shallow dish and refrigerate for 1 hour until set. Repeat with lemon gelatin in a separate dish.
02 - Beat heavy whipping cream in a mixing bowl until soft peaks form. Set aside for later use.
03 - Beat cream cheese, sugar, and vanilla extract until smooth. Gently fold in whipped cream until fully combined.
04 - Once gelatin is set, cut both strawberry and lemon gelatin into 1/2-inch cubes for layering.
05 - Layer ingredients in each jar: cream cheese mixture on bottom, strawberry gelatin cubes, diced strawberries, mini marshmallows, another layer of cream mixture, lemon gelatin cubes, diced pineapple, remaining marshmallows, and final cream layer on top.
06 - Refrigerate assembled jars for at least 1 hour to allow layers to set properly.
07 - Top each chilled jar with whipped cream, place a marshmallow bunny candy on top, and sprinkle with pastel sprinkles just before serving.
