→ To Serve

16 - 1 small red onion, finely diced
17 - Cherry tomatoes, sliced (optional)
18 - Fresh cilantro or parsley, for garnish
19 - Lime wedges

# How to Make It:

01 - Whisk together honey, lime juice and zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper. Coat chicken breasts in marinade and let sit for at least 15 minutes.
02 - Rinse rice under cold water. In a saucepan, combine rice, water or broth, and salt. Bring to a boil, reduce heat, cover, and simmer for 12-15 minutes, or until tender. Fluff with a fork and set aside.
03 - Gently toss diced avocado with lime juice, chopped cilantro, salt, and pepper. Set aside.
04 - Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes per side, or until cooked through. Rest for 5 minutes, then slice thinly.
05 - Use a ring mold or free-form: Layer rice at the base, top with avocado mixture, then slices of chicken. Sprinkle red onion, cherry tomatoes, and fresh cilantro or parsley on top. Serve with lime wedges.

# Expert Advice:

01 -
  • The honey and lime create this incredible sticky glaze that caramelizes beautifully on the chicken while keeping it ridiculously juicy inside
  • Every forkful hits all three layers at once, which means you get creamy, tangy, and savory in a single bite
02 -
  • Don't skip resting the chicken after cooking, those 5 minutes make the difference between juicy and dry meat
  • A ring mold makes these look restaurant-worthy, but honestly they taste just as good piled in a bowl
03 -
  • If you want extra heat, mince some jalapeño into the avocado mixture, but start with half and taste first
  • Pound your chicken to even thickness before marinating so it cooks evenly and stays tender
