01 - Line a baking sheet with parchment paper.
02 - Insert a lollipop stick firmly into each marshmallow without pushing through the other end.
03 - Place chopped chocolate in a heatproof bowl and melt over simmering water or in short microwave bursts, stirring until smooth.
04 - Dip each marshmallow into the melted chocolate, swirling to coat evenly, then allow excess to drip off.
05 - Sprinkle or roll coated marshmallows in chosen toppings immediately while chocolate is wet.
06 - Place coated marshmallows on the prepared baking sheet.
07 - Refrigerate for at least 30 minutes until the chocolate is firm.
08 - Serve the marshmallows chilled or at room temperature.
